Cooking Class: Spring in Tuscany - Fresh Italian Vegetarian Cooking
Focaccia by hand. Gnocchi lighter than air. Tiramisu the way it's supposed to be. Chef Jean walks you through a Tuscan spring dinner.
Some meals deserve to be made slowly, with good ingredients and no shortcuts. This is one of them.
Chef Jean brings his classical training and a deep love of Italian simplicity to Maricel's Kitchen for an evening rooted in the Tuscan countryside — fresh, vegetarian, and the kind of cooking that makes people ask for the recipe before the plate is cleared.
You'll make it all from scratch, step by step:
Fresh Focaccia — pressed by hand, finished with olive oil, sea salt, and herbs. You'll learn the technique that gets that crisp edge with a pillowy center every time.
Tuscan White Bean and Kale Stew — rustic and deeply satisfying. Creamy beans, tender kale, garlic, and good olive oil. The dish that proves simple ingredients don't mean simple flavor.
Ricotta Gnocchi with Peas, Lemon, and Parmesan — lighter and brighter than potato gnocchi, made with fresh ricotta and finished with sweet peas and a squeeze of lemon. The dish everyone at the table will want to make again.
Tiramisu — classic, balanced, not too sweet. Espresso-soaked ladyfingers, real mascarpone, a dusting of cocoa. Made properly, the way Chef Jean insists.
No experience needed. Just show up hungry, ready to cook, and open to a meal that will feel like somewhere else entirely.
You'll sit down and eat everything together at the end of the night — then go home with the recipes and the skills to make it again.
Reserve your seat. Spring doesn't last long.
